This was delicious and much easier than the normal water bath set up. I will definitely make this again! Would love to hear your ideas for other flavors. I think it would simple enough to replace the squash with other puréed fruit.

I live in a city so I have a stand mixer and a breville blender, but no food processor. Is it worth buying a food processor to make this, or do you think I could get by using the stand mixer after I mash the squash?
No need at all. You can crush the crackers in a zip top bag for the crust. Then purée the squash in the blender, and make the filling either by hand or with a mixer. I just used a food processor so I can make the crust and filling with one tool.

I was short 3 sheets of graham crackers so I subbed a few Biscoff cookies. I haven't made the cheesecake yet but wow does that crust smell delicious!
