ok, but we DO want to hear about the time Ham had to make 100 turkeys....please. And i really appreciate your approach to this year by summarizing all the recipes you've already developed in one place to give yourself space to be present with the baby. enjoy your time together!

I managed to find some honeynut squash, so I'll be making the soup! Question: how many people does the Instagram recipe serve? (Do I need to double for six people?) And, when you're doing the pecans, are you adding sugar or salt along with the red pepper? (I'll also be doing your vegan stuffing, after only ever making from a Pepperidge Farm bag. 🤞 Thank you!!!

The ig recipe makes enough for 2 dinner portions. Doubled it will be enough for 6 appetizer portions. For the pecans, I toasted them in oil and seasoned with salt and chili flake. A touch of maple syrup in there would be nice if you want them to be candied. Good luck!

Any advice for cooking a 20# turkey? My mom insists on getting a big turkey. I tried to convince her to spatchcock it this year but I don’t think she will. She always starts the turkey too early. Last year they sliced it ahead of time and put it back in the oven on warm 🤦‍♀️ I don’t think my parents have ever had a moist turkey because they don’t think their turkey is dry and I don’t have the heart to tell them.

It’ll be okay! The whole roast turkey method will work, just take longer. A smaller turkey cooks more evenly and is less likely to dry out, but any size will be pretty good if you take the time to dry brine (at that size definitely go the full 48 hours) and use a thermometer!

If you add the stuffing inside the turkey before cooking, make sure the internal temperature of the stuffing is 160f. This will likely mean your turkey will be over cooked. The other option is to cook your stuffing on the side then stuff the turkey with it after it’s fully cooked.
